Mont-d'or in the oven, the famous hot box?

Normally, the "hot box" is served with boiled potatoes with their skin on , then placed in the oven for a few minutes to make them crispier. Table on a dozen potatoes. Also plan 4 slices of raw ham from Haut-Doubs, and cook 1 Morteau sausage, 1 Morteau sausage with cumin and 1 Morteau sausage with cabbage in a saucepan (start in cold water: allow 25 minutes of cooking when the water starts to simmer). The Mont-d'or fondue recipe

In fact, we can consider that the "hot box" is already a form of fondue ... But you can also taste Mont-d'or like "Savoyard fondue" ! For 4 people, you will need:

• 500 g of Mont-d'or;

• 1 glass of dry white wine;

• pepper.

Cut the cheese into small cubes, which you place in your fondue pan. Let melt over low heat, stirring constantly. Usually, it takes approximately twenty proceedings for the Mont-d'or to be well melted.

Then pour in the white wine , and pepper to your liking. When the cheese "spins" properly, the fondue is ready to eat! Place it on the stove over low heat, and dip what you want in it: cubes of cooked potatoes, small pieces of bread, cold cuts ...

What cooking time for Mont-d'or?

In general, it takes between 20 and 25 minutes of cooking for the Mont-d'or to be well melted. However, for the "hot box", you can leave it a little longer if the crust is not golden enough for your taste ...

Note: during pregnancy, you cannot taste raw Mont-d'or. This cheese is one of the foods not recommended for pregnant women: being prepared from raw milk, it presents a risk of listeriosis ... But if it is cooked through to over 70 ° C for at least 2 minutes, the bacteria will be destroyed, and you can normally eat it safely. On the other hand, it is better that the cooking is homogeneous. In a "hot box" for example, unless you have a kitchen thermometer, you will have a hard time knowing what the real temperature is in the center of the cheese (it is hotter on the surface), whereas in a fondue or a sauce, the whole forming will cook at the same temperature. If in uncertainty, do not hesitate to ask your doctor for advice.

What wines and accompaniments to serve with Mont-d'or?

Mont-d'or goes very well with white wine , in particular Chardonnay from Burgundy, with subtle aromas of honey ... If you are more red wine, prefer a wine with character, sufficiently acidic to combat the fat of Mont- gold: a pinot noir from Alsace for example. As for the accompaniment, Mont-d'or is generally served with baked potatoes, various pieces of cold meats (examples: ham, Morteau sausage) and a small green salad. In sauce or cream, it also goes very well with pasta, rice (risotto style), salmon, bread and chicken.
