Why do you have to wash the mussels?
Like
most of what we buy for the purpose of cooking ( fruits, vegetables ,
rice ...), mussels must be washed scrupulously before
being prepared. And for good reason, during their long stay in the sea
before being fished, they can find themselves full of sand and other
impurities, both inside and outside the shell. In order to avoid ingesting
this dirt which may not die or disappear entirely during cooking, so it is
best to wash them in plain water several times to be sure they are edible. And
this even if at the fishmonger you are informed that it has already been done. You
can never be too careful with the food! Proper cleaning greatly reduces
the risk of getting food poisoning.
How to wash your mussels properly?
To wash your mussels properly, there are several steps to follow. The first is that you have to sort it out. All moldswhich come out of their packaging broken, cracked or opened must be put in the trash. In the case of half-opened mussels, you can try to reseal them by tapping on them before deciding to throw them away. If they emit resistance: trash. A damaged or no longer closed mussel is unfit for consumption. Then remove any white residue stuck to the shell with a knife. Once you have done this first sorting and cleaning, immerse your mussels in a container filled with cold water. You can add a few tablespoons of salt to them to help them purify themselves and completely empty the sand and dirt inside. As a precaution, you can change the water after a few minutes and start over. All the mussels that float on the surface of your water are also to be discarded. You can take your knife back and scrape the mussels one by one if necessary. Once all these steps have been completed, all you have to do is rinse them all with clear water and drain them before starting your recipe for marinated mussels for the meal.
