The ingredients to make the osso-bucco recipe by Cyril Lignac

For 6 people you need:

• 1.2 kg thickly sliced veal shank

• 2 carrots

• 2 onions

• 6 small onions

• 1 stalk of celery

• 1 branch of basil

• 500 g of peeled tomatoes in juice

• 25 cl of white wine

• 20 cl of broth

• 3 tablespoons of olive oil

• 2 tablespoons of flour

• 1 sprig of thyme

• salt and pepper

• 1 clove of garlic

• 2 tbsp flat-leaf parsley

• 1 lemon zest

• 1 orange zest

The stages of preparation of the osso-bucco by Cyril Lignac

Step 1: Peel the carrots and grate them.

Step 2: Cut the celery into sections.

Step 3: Peel and slice the onions. Remove the first skin from the onions.

Step 4: heat the oil in a casserole dish and brown the onions.

Step 5: add the meat and brown it.

Step 6: sprinkle with flour and mix.

Step 7: add the peeled tomatoes with their juice, the thyme and the rest of the vegetables.

Step 8: Wet with the white wine and the broth. Add salt and pepper. Cover and cook for 1 hour over low heat.

Step 9: prepare the gremolata: chop the parsley, peel and chop the garlic. Mix in a bowl with the citrus zest.

Step 10: divide the osso-buco among 6 mini-casseroles and sprinkle with basil and gremolata.
